Three cheese gnocchi bake
Ingredients:
500g San Remo gnocchi
500g passata
100g spinach
350g ricotta cheese, crumbled
2tbsp. parmesan cheese
1 cup mozzarella cheese
2tbsp. chopped basil
½ cup chopped parsley
Zest from 1 lemon
1 punnet of cherry tomatoes
Salt and pepper to season
Method:
- Preheat oven to 180°C
- Cook gnocchi in a large pot of salted boiling water following packet directions. Drain and rinse. Return to pot.
- Add passata, spinach, ricotta cheese, half of the mozzarella cheese, basil, parsley, lemon zest, cherry tomatoes and seasoning. Toss to combine.
- Transfer mixture to a baking dish and top with remaining mozzarella cheese and parmesan cheese.
- Bake for 10 minutes or until golden brown.
Serve with salad.
