Spicy corn ribs


3x corn on the cob, tops and bottoms removed, quartered lengthwise

2 tbsp extra virgin olive oil

2 tsp paprika

Juice from 1 lime

Coriander to garnish


2 tbsp mayonnaise

1 tbsp sriracha

Juice from ½ lime


  1. Place cut corn in a large mixing bowl and top with oil, paprika and lime juice. Use your hands to coat the corn ribs.
  2. Place the corn ribs into the air fryer and cook on high for 10 minutes or until tender and crispy.
  3. Meanwhile, add mayonnaise, sriracha and lime juice to a mixing bowl and stir to combine.
  4. Serve corn ribs on a large platter and generously drizzle with dressing. Season to taste.


Serve with lime wedges and garnish with coriander.
