Healthy Granola

Healthy granola

This granola delivers a host of important nutrients and is made with oats, extra virgin olive oil, fruit as well as nuts and seeds.

Ingredients:

300g rolled oats

1tsp vanilla extract

4tbsp sesame seeds

100g pepitas

100g almonds

50g sunflower seeds

100g dried cranberries

70g dried blueberries

100ml golden syrup

80ml extra virgin olive oil

Method:

  • Preheat oven to 150° C
  • Add all the ingredients together except the dried blueberries and cranberries in a mixing bowl
  • Place mixture in baking trays and place in the oven for 15 minutes
  • Add dried blueberries and cranberries to the mixture and place trays in the oven for a further 10-15 minutes or until the mixture is golden brown

To serve: add toppings to your bowl of granola as desired e.g. fresh fruit and Greek yoghurt

Makes 12-15 serves.

      Hi Jackie,

      Of course! Many of the other recipes can be enjoyed at lunch – see salads, soups, poke bowl etc. I often enjoy a sandwich with lots of coloured veggies, avocado and protein e.g. tuna, tinned salmon + cheese. Another easy-to-prepare option is a mini cheeseboard with whole grain crackers, cut-up veggies, dips and fruit slices. Other ideas include homemade rice paper rolls, eggs on toast (with a side of veggies), falafel in pita and wraps.
